Since eating animal products, I have focused a lot on organ meat due to its tremendous nutritional value. Of all the organs, the (raw) liver is the king as it is one of the MOST nutritionally dense foods. And it is unique not only due to its content but also because this content of essential nutrients presents excellent bioavailability. This means they come in a form the body absorbs and uses.
But the truth is that if you haven’t been a person that grew up eating organs meat, starting to eat raw liver can get pretty challenging if you are not used to it, ha?. As I began to want to eat liver, I wanted to eat it raw to keep all its nutrients as some nutrients are sensitive to damage by heat.
But eating raw liver is something not easy to do!
So after many tries and errors, I found the perfect marination to make the liver (actually) tasty!
This recipe is a credit of Liver King (if you don’t know him, I highly recommend checking him out!). I have found that this marination is an excellent start if you are new to eating raw liver and just starting to get its flavour.
As easy as mixing grass-fed liver (in pieces) with extra virgin olive oil + maple syrup + sea salt.
That is all!!
Marinate it for as long as possible so the liver absorbs this flavour.
I can promise you that the typical liver flavour is nearly gone! And it gives it a better texture.
