This very simple Salad to Go recipe is perfect for taking as a lunch to the office or for an outdoor picnic during summertime. The only thing you’ll need is a mason jar 🙂
Salad To Go Recipe
Yield: 2 mason jars
Ingredients:
- 1 cup cooked rice or quinoa
- 1 cup some type of beans (garbanzo, pinto, black), sprouted and cooked. Or animal protein such as tuna, chicken, beef or turkey.
- 1/4 red onion, chopped
- 1 bell pepper, chopped
- 1/2 cup cucumber, chopped
- 1 cup romaine lettuce, chopped
- ½ cup tomatoes, chopped
Dressing:
- 2 tablespoons tahini
- 1 lemon juice
- 3/4 cup water
- 1 tablespoon coconut aminos
- ¼ teaspoon sea salt
Preparation:
- In two mason jar add the ingredients in the same order as they are in the list of ingredients.
- For the dressing mix all the ingredients together.
- Whenever you are ready to eat the salad, add half of the dressing to one mason jar and half into the other, mix well and enjoy!
Ps. Feel free to remove or add any other ingredient that you want. Some other ingredients that also work well are: olives or fruit like mango or pineapple.
